UIW Announces Re-Launch of Dietetic Internship Program Under New Leadership

UIW Broadway CampusThe University of the Incarnate Word (UIW) proudly announces the re-launch of its Dietetic Internship Program, now under the direction of Dagny Larson, PhD, RD, LD. This innovative program offers a 9-month, community-focused internship beginning every August, designed to train future registered dietitians with a strong foundation in sustainability and diverse practice settings. Interns will complete two graduate-level courses that prepare them for supervised practice and provide dedicated time for RD exam preparation.

The UIW Dietetic Internship emphasizes hands-on experience through partnerships with multiple community organizations. Interns will gain exposure in:

  • School nutrition and foodservice
  • Acute in-patient clinical nutrition
  • Gardening and culinary medicine
  • Virtual and telehealth modalities
  • Nutrition education in individual and group settings for English- and Spanish-speaking audiences
  • State and federal nutrition programs

A unique feature of the program is a one-week enrichment rotation, allowing interns to select a site that aligns with their professional interests. Options include international rotations, where interns travel with UIW nutrition faculty to engage in nutrition education and research abroad.

Dr. Larson brings to the program extensive experience across clinical settings, including dialysis, long-term care, and inpatient rehabilitation. Her research focuses on improving patient-centered nutrition education and developing technology to support individualized care for diverse populations. Interns will also have the opportunity to work with other nutrition faculty, who have experience in clinical research, culinary medicine, international nutrition, and business leadership.

Applications for the Fall 2026 cohort are due through DICAS by January 15, 2026.
