Department Of Nutrition

Welcome to the Department of Nutrition at the University of the Incarnate Word. One of six departments in the School of Mathematics, Science and Engineering, Nutrition offers dynamic programs at the undergraduate, professional and graduate levels, preparing students for careers that promote wellness and improve quality of life.

The UIW Nutrition program strives to provide responsive, individualized attention to develop students in a multicultural, socially cohesive environment in order to create a better future through food and nutrition.

The mission of the University of the Incarnate Word Nutrition program is to prepare professionals committed to providing nutrition and dietetic services to improve the health and well-being of individuals and groups. The program emphasizes the importance of scientific and evidence-based practice, ethical decision-making and understanding of social justice issues, including the regional and global ecological dimensions of food and nutrition.

Students of the Nutrition program can expect a broad curriculum that integrates the study of biology, chemistry, behavioral sciences and business into various areas of nutrition, including food preparation, food service, nutrition programming, nutrition education and nutrition therapy. Throughout their program, they study under Nutrition faculty who are scholars with deep expertise in their field and experience working with international communities expanding their understanding of global health.

Graduates go on to rewarding careers in healthcare, food service management, food industry, community nutrition programs and governmental agencies, private practice, wellness, sales, research and media communications.

Dietetic Internship 

This eight-month fully accredited program focuses on diversity in nutrition care. Students gain valuable, supervised practical experience in settings from hospitals to school districts to product development kitchens.

The graduate Nutrition program engages students in learning, research and discovery, and service to address human needs by promoting nutrition for well-being across the lifespan of individuals, families and communities while embracing evidence and ethical-values-based decision-making.

Accreditation Council for Education in Nutrition and Dietetics (ACEND) 

In the Department of Nutrition at the University of the Incarnate Word, the Didactic Program in Dietetics (DPD) and Dietetic Internship (DI) are both granted full accreditation by ACEND. ACEND is the accrediting agency for education programs preparing students for careers as registered dietitian nutritionists (RDNs).
